    Safflower (Carthamustinctorius L.) is an annual, broadleaf oilseed crop. Safflower was originally grown for the flowers that were used in making red and yellow dyes for clothing and food preparation. Today this crop supplies oil, meal, birdseed, and foots (residue from oil processing) for the food and industrial products markets. The oil in linoleic safflower contains nearly 75% linoleic acid, which is considerably higher than corn, soybean, cottonseed, peanut or olive oils. This oil can also be used as a diesel fuel substitute, but like most vegetable oils, is currently too expensive for this use. Safflower is native to arid environments having seasonal rain. It grows a deep taproot which enables it to thrive in such environments. Safflower is a fast growing, erect, winter/spring-growing annual herb, which resembles thistle. The main shoot reaches heights of 30–150 cm (12–59 in). Flowers are commonly yellow, orange and red, but white and cream coloured forms exist. Each flower head commonly contains 15–50 seeds; however, the number can exceed 100. The shell content of the seeds varies between 30-60%, the oil content of the seeds varies between 20-40%.Safflower is mature when most leaves have turned brown approximately 30 days after flowering. Seeds should fall from the head when rubbed. Moisture in seeds should not exceed 8% to allow for a safe, long-term storage. Temperatures must not exceed 43 °C (109 °F) to prevent damage to the seed and ensure quality.
